Nourishing Your Life - Finding Balance In Your Kitchen

Having come from a background of modeling where my weight and measurements would dictate my success and eventually happiness. The relationship I had with food is not one which you would ever consider balanced until recently that is. It’s nearing a year now since I made the decision to start studying sports medicine which lead me to pulling back from modeling. By doing this it gave me a safe place and rather permission to evolve mentally, spiritually and to physically take on a new form. I knew if really wanted to put on muscle I would have to do it on my own terms. Now weighing heavier and appearing more toned my energy has drastically improved along with the physical capabilities I’ve adapted too. Im not an athlete by sport but rather one that takes on physical demands. It wasn’t long after studying I realized I could train, nourish and recover like one.

Food is such an important component to athletic performance. It’s also the driving source to any energy we exude. It dictates our emotional state to physical capabilities.

One of my go to meals shown in the photo above not only because of the simplicity in preparation and clean taste but also because of how easy it is to digest; cod, broccolini and quinoa. Cod is one of my favorite fish to eat. Not only because of the mild taste and meaty texture, it contains essential vitamins and minerals while low in mercury and relatively high in Omega- 3 fatty acids. High in protein and low in fat. Personally I have better experience digesting broccolini rather than traditional broccoli. It’s one of those vegetables that expend in your stomach and if your sensitive may feel bloating while others have no symptoms. It’s mild, has a sweet earthy taste and packed with vitamins and minerals. Quinoa, gluten free, high in protein and fibre. It also contains sufficient amounts of all 9 essential amino acids along.

We should all strive to find balance in our lives for that is where we can find joy in the simple things

Several weeks ago a friend and I sat on a near by patio at a local cafe sipping almond milk latte’s, while we talked about life, adventures and travel; okay we talked about our happy place. From their time folded and we had our first adventure planned out. He showed me images from one of his recent trips to the Mojave Desert. I’m always amazed that within a few hours you can literally feel like you’re in another world. That idea alone sets my soul on fire!

As a few weeks went by, we had it all planned out. We were desert bound. There’s something about the air as soon as you leave LA. For me it’s a sense of freedom… I feel lighter, more centered not mention creative. I simply feel alive. I can’t stress enough how important it is to re-energize your soul. I used to be a person that would hang around waiting for others to plan something or I would just hang out letting time pass thinking that was enough. Until I went down a new path in life, one which I met myself front and center. My time became more valuable, my heart had a new awareness of happiness and my soul craved adventure.

It was my first time hiking the sand dunes. I’ve heard the expression “God’s Country” and well this was exactly that. It’s where I felt closer to my beloved father, who I was and who I am. Im not sure if Im explaining myself accurately, but there’s this feeling I get being vulnerable in the outdoors that excite’s and also frightens me. I can feel how the climate affects my body and mental state. While walking through the untouched land hearing all the peculiar noises unsure if there’s going to be a poisonous snake that could bite you and if that happens the fear of what to do. After all we were so far out and no hospital would be close enough should we urgently need one.

As we trekked the sand dunes I realized something. That as evolved and skilled as I’ve become in life and the outdoors, Im still connected to the woman that feared the unknown. The person that was scared to take risks, worried I would be too out of my comfort zone. Well it lasted a moment, then realizing it was just a state of mind and I had the option to have full control.

If you haven’t been to the Mojave desert then I highly suggest you go! Make sure you take enough water and layers to keep yourself protected from the sun and later cool air. The wind will blow the sand unexpectedly so a buff or bandana is a must. I recommend taking trekking poles, they’re extremely useful when hiking up the slippery sand and when coming down reducing the impact to your knees. I hope this place brings you clarity and a new found respect for mother nature .

Dragon Fruit- Superfood Spotlight

With it’s bold bright pink color and being a mix of flavor between a kiwi and pear what’s not to love about a dragon Fruit smoothie bowl?! Im always looking for ways to brighten up my day’s. Working long hours, normally a 16 hour day and training both my clients and self food is my fuel! Packed with antioxidants , fibre and tons of vitamins Dragon Fruit is similar to Acai. You can always add protein to the mix. I like adding isolated whey. It’s refined and has more of the fats and lactose carbs removed and has a higher protein percentage which is absorbed more quickly!

Here’s what you”ll need;

  1. 1 frozen pack of Pitaya Plus organic dragon fruit

  2. 1/2 frozen banana

  3. 1 cup almond milk (add more for desired consistency) Watching those calories? Substitute with water.

  4. Ice

  5. 1 scoop isolated whey protein powder

Now blend everything together!

Here’s the fun part, TOPPINGS!!

  • Organic hemp seeds

  • Organic blackberries

  • Organic gogi berries

  • Organic almond butter

This is one of my sacred spots where I go to connect with nature and better yet myself. For me, this is paradise… Surrounded by snow cap mountains and unique rock formations the exploring is endless. Fueled and energized by nature, Karuna. A natural coffee drink, sweetened with dates, coconut cream and turmeric for added health benefits. How are you going to fuel your life, mind, body?

Got Milk? Homemade Almond Milk in 3 min and Coconut Flour, Dark Chocolate Peanut Butter Cookies

One of my favorite treats would have to be peanut butter cookies loaded with dark chocolate chips and glass of ice cold vanilla almond milk! You can always opt out for almond or cashew butter. They have to be soft and packed with chocolate. It’s cheat day after all.

I’ve always wanted to make my own Almond milk, but felt it might be too difficult, well it wasn’t!I found a simple recipe online that would only take 3 min to make, which turned out to be true! Of course you have to soak the almonds 24-48 hours prior. Other then that once you have your ingredients and a milk bag you’re set.

ALMOND MILK IN 3MIN

-Soak the almonds in a few cups of water so completely covered and let sit 24-48 at the most. You’ll start to see them grow in size…

  • 1 cup soaked almonds

  • 4 cups water

  • 1/2 tsp sea salt

  • 1/2 tsp vanilla extract

Blend the ingredients for 1.5- 2 min and your set! On a side note, if you want to add sweetness to your milk you can always use agave, coconut sugar or stevia!

COCONUT FLOUR PEANUT BUTTER COOKIES WITH DARK CHOCOLATE CHIPS

  • 2 tbs coconut flour, add more if needed

  • 1/2 cup low carb sweetener

  • 1/2 tsp stevia concentrated powder or 1/2 tsp monk fruit extract

  • 1 cup unsweetened peanut butter

  • 1/2 cup butter or butter substitute (your pick)

  • 2 eggs

  • 1/4 tsp salt

  • 1tsp vanilla extract

  • you decide how much chocolate chips… it’s cheat day!

Mix ingredients together and lay on cookie sheet lined with parchment paper. Bake at 350 F for 12-15 min until edges of cookie have browned.
